Flourless Pumpkin Pie Muffins

I came across this delicious recipe while participating in a book study at a friend’s house. These addictive muffins are SO healthy and nutritious while avoiding a lot of not-so-good ingredients like white flour and white sugar. And they taste AMAZING!

I mix up a double or triple batch and my hubby eats them for breakfast all week long.

 

3/4 cups pumpkin puree

1 large egg

1/2 cup rolled oats

1/4 cup almond butter

6 tbsp honey

1/2 tsp baking soda

1 tsp ground cinnamon

1/2 tsp ground cloves

1 tsp vanilla extract

2 tbsp flax seed or wheat germ

Optional : 1/4 cup mini chocolate chips (I leave these out)

 

Preheat oven to 375 degrees. Blend all ingredients in a blender, stirring several times as the batter is THICK. Scoop into greased or lined muffin cups (3/4 full) and bake for 18-20 minutes, or until a toothpick comes out clean. Cool in the pan 10 minutes before removing. Store in an airtight container for up to 1 week or freeze.

What’s Your Back to School Wellness Plan?

It’s August … back to school! Fall is just around the corner, even though it’s still in the 90s here.

So what’s your wellness plan? How will you prevent sickness, and enhance health at home? Keep yourself, your spouse and kids well? I come from a family of 9, so I take wellness seriously! I’m all about maintaining health and living offensively … NOT waiting until I’m sick to do something about it.

Here’s a start! Some of my favorites from our routine…
